March the month for all our Irish friends.  So make a special treat you can share with your friends.


Ready made chocolate cups can be used, you will need 8.                          

1 tbsp. water                                                 1 tsp. unflavored gelatin
1 1/2 c. fresh raspberries                             1 c. whipping cream
1/4 powdered sugar                      fresh raspberries/mint leaves if desired

1.  Place water in small microwave-safe bowl: sprinkle gelatin over water.  Let stand for 5 mins. to soften.
2.  Place 1 1/2 c. raspberries in blender container or food procesor bowl with metal blade.  Cover blend until pureed.
3.  Micowave gelatin on high for 30 to 40 secs. or until gelatin is dissolved.  Add to raspberry mixture, mix well.
4.  In small bowl beat whipping cream and sugar until stiff peaks form, do not over beat.  Gently fold in raspberry mixture, cover refrigerate until ready to serve.
